Apple and oat pancakes with Monk Fruit

Tortitas pequeñas de manzana y avena con gotas de Monk Fruit, en un plato blanco

These are the pancakes we have for breakfast at home. We used to make them with banana, but we realised it wasn't the healthiest way to start the day. We tweaked them a couple of times until we landed on this version, and the kids love it.

They're made with apple, oats and eggs, and there's no table sugar: the apple brings the sweetness and, when serving, a few drops of Monk Fruit. Blend everything, then cook them in a pan.

Ingredients

Makes about 50 small, bite-size pancakes

  • 2 eggs
  • 1 Golden Delicious apple
  • 4 tablespoons oats (gluten-free, if you need it)
  • Half a cup of nut drink, such as cashew or hazelnut (about 120 ml)
  • 1 teaspoon almond butter
  • A pinch of salt

To serve: a few drops of Monk Fruit Pure Drops.

The plant drink: ideally a nut drink, with no added sugars, no rice and no E-additives. Check the label: the shorter, the better.

Method

  1. Chop the apple and blend it with the rest of the ingredients until smooth.
  2. Heat a non-stick pan over medium heat.
  3. Add one heaped teaspoon of batter per pancake. When bubbles appear on the surface, flip them and cook for one more minute.
  4. Serve with a few drops of Monk Fruit Pure Drops on top.

Sweetness, to your taste

Monk Fruit is much sweeter than sugar: start with just a few drops and adjust.

To adapt your own recipes, for every 100 g of sugar: 15 g of Powder, or 8 ml of Drops (one and a half teaspoons).
