Frequently asked questions

What is Sava?

Sava is a food brand that uses monk fruit—an ingredient with centuries of history and naturally sweet. We believe that what you eat regularly matters more than what you eat one day: that's why we make short-label products with natural ingredients. Everything else is out—no E-additives, nothing ultra-processed. We start with sweetness, with Sava Ritual: for coffee, matcha, and baking. And this is just the beginning.

What is monk fruit?

Monk fruit (Siraitia grosvenorii) is an ancient fruit, cultivated for centuries by Buddhist monks. Its intense sweetness comes from mogrosides—compounds unique to this fruit—and not from the fructose or glucose in other plant-based sources of sweetness, such as honey, agave, dates or coconut sugar.

How is it different from stevia?

Monk fruit and stevia are the two most well-known options for intense plant-based sweetness, but they differ in origin and character. Sava's monk fruit comes from a decoction of the fruit—water that extracts its natural sweetness—with no bitterness or aftertaste. Stevia, on the other hand, is a leaf extract with a characteristic metallic aftertaste; this is why it is almost never sold pure, but rather mixed with polyols (erythritol) or flavorings that mask that taste. Stevia is classified in the EU as a food additive (E960); monk fruit, as a food ingredient.

What is tapioca fiber and why do you use it?

Monk fruit is so naturally sweet that a single grain would sweeten an entire cup. That's why it needs a natural carrier to make it spoonable: we use soluble tapioca fiber, a plant-based ingredient extracted from the cassava root. It's not an additive or a filler — it's what makes monk fruit work in your kitchen. Each 1.17 g serving provides about 0.8 g of fiber.

Where and when will Sava be available?

Coming this year, very soon, and first to Spain. If you want to hear before anyone else, join the list. If you're interested in another country, write to us at hello@sava.food and we'll keep it in mind.
